Can I delete all the sub-directories in components and re-install all the extensions? Or are there native Joomla components there, as I suspect?

Do NOT delete all of the directory and files under the components directory! That is NOT the way you uninstall components in Joomla!. You need to login to Joomla! VirtueMart can be found there and uninstalled but depending on how old your current VirtueMart installation is, you may be able to update it without fully uninstalling it first.
